Blanc de Blancs
Our Blanc de Blancs is a 100% organic Chardonnay from Mendocino County. Produced in the "Methode Champenoise" technique, each varietal is harvested before traditional white wine grapes, at relative low sugar and high acid content. The result is a crisp, lively sparkling wine of elegance and finesse. Our Blanc de Blancs has delicious aromas of green apples. The mouthfeel is lively with a little creaminess at the back of the palette. Our Blanc de blanc is dry and has nice green apple flavor throughout.

Primary Fermentation: stainless steel and neutral French oak
Secondary Fermentation: in bottle
Aging: aged in bottle for 16 months
