Novello is an early-release red wine that's light and fresh. It's made from 100% organic Nebbiolo grapes grown on the estate property at Campovida. This wine is made by the traditional method for making Novello, carbonic maceration. We keep the fruit in a no-oxygen environment by gassing the tank with CO2 to allow the natural yeast to create mini fermentations in the grapes. After about 2 weeks, we foot stomp the grapes and complete fermentation. Nebbiolo is a great choice for this style of wine because it’s naturally light but maintains a robust body due to the naturally higher tannin content. Picking it early gives us a lower alcohol and the bright acidity that makes this a great food wine for antipasti, grilled vegetables, saffron risotto, and roasted chicken. Small notes about this wine since is was made so purely and quickly, it was not cold stabilized, which if you decide to chill this wine, it may trigger crystallization, which are natural tartrates and normal when the pH shifts.
