Novello is an early-release red wine that's light and fresh. It's made from 100% organic Nebbiolo grapes grown on the estate property at Campovida. This wine is made by the traditional method for making Novello, carbonic maceration. We keep the fruit in a no-oxygen environment by gassing the tank with CO2 to allow the natural yeast to create mini fermentations in the grapes. After about 2 weeks, we foot-stomp the grapes and complete fermentation. Nebbiolo is a great choice for this style of wine because it's naturally light but maintains a robust body due to the naturally higher tannin content. Picking it early gives us lower alcohol and the bright acidity that makes this wine a great food wine.
