2015 Cabernet Sauvignon
This wine is a pure expression of dark fruit and earth/herbal aromas typical of the varietal. Juicy blackberry and boysenberry flavors are paired with black peppercorn notes. This is a medium to heavy styled wine with a powerful acid backbone balanced with a strong plum finish.
Our Cabernet Sauvignon comes from Dark Horse Ranch, a 160-acre Biodynamic certified ranch and vineyard owned and managed by Heath and Paul Dolan. Located 8 miles north of the town of Hopland along the banks of the upper Russian River and sitting at 2,500 feet of altitude, this site provides outstanding conditions for growing Cabernet Sauvignon.
Harvest date: September 20, 2015
Fermentation: De-stemmed and crushed in a stainless steel tank. Cold soaked for 5 days to extract color and desirable phenolic compounds. Fermented to dryness at 85F. Native malolactic fermentation carried out in barrel.
Aging: Aged for 16 months in neutral French oak.
